LIFE HACK! This works for chicken breast up to 250g/8oz each. Any larger, let it simmer for a minute before turning the stove off! It works consistently because the residual heat in the water gently cooks the chicken through without overcooking the outside, but the falling water temperature means the chicken can never overcook.
